Ingredients:
For Coconut Burfi Layer:
- 1 1/2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
For Brownie Layer:
- 1/2 cup unsalted butter
- 3/4 cup semi-sweet chocolate chips
- 2/3 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1/2 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a bowl, mix the shredded coconut, sweetened condensed milk, ground cardamom, and salt. Set aside.
- In a medium saucepan over medium heat, melt the butter and chocolate chips, stirring until smooth. Remove from heat and let cool slightly. Whisk in granulated sugar, brown sugar, eggs, and vanilla extract. Sift in flour, cocoa powder, and salt, then fold into the wet ingredients until just combined.
- Spread half of the brownie batter in the prepared pan. Evenly layer the coconut burfi mixture over the brownie batter, then spread the remaining brownie batter over the coconut layer.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Cool completely.
