Ingredients:
- 1 cup red lentils, rinsed
- 4 cups water
- 1 tablespoon vegetable oil or ghee
- 1 large onion, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper (optional, adjust to taste)
- 4 cloves garlic, minced
- 1 (1-inch) piece ginger, grated
- 1 (14.5-ounce) can diced tomatoes
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
- Juice of 1/2 lemon
Instructions:
- Cook the Lentils:
In a medium pot, combine the rinsed lentils and 4 cups of water. Bring to a boil, then reduce the heat and let simmer for 20-25 minutes, or until the lentils are tender. Skim off any foam that rises to the top, and set the cooked lentils aside. - Prepare the Aromatic Base:
In a large skillet, heat the vegetable oil or ghee over medium heat. Add the chopped onion and cook until it becomes soft and golden, about 5-6 minutes. Stir in the cumin seeds, ground coriander, turmeric, ground ginger, and cayenne pepper (if using). Cook for another 1-2 minutes until the spices are fragrant. - Add Garlic, Fresh Ginger, and Tomatoes:
Add the minced garlic and grated ginger to the skillet, stirring well. Cook for about 1 minute, then add the diced tomatoes. Cook until the tomatoes soften and the mixture thickens, about 5 minutes. - Combine with Lentils:
Add the cooked lentils to the skillet, stirring to combine everything evenly. Season with salt and pepper to taste. If the dal is too thick, you can add a little water to reach your desired consistency. Let the dal simmer for another 5-10 minutes to allow the flavors to meld. - Finish with Lemon and Cilantro:
Squeeze fresh lemon juice over the dal and stir. Garnish with chopped cilantro for a burst of freshness. - Serve:
